2 egg  Yolks
2 egg  Whites
60g  Granulated sugar
50g  Cake flour
10g  Cocoa powder
Powdered sugar (for dusting)

300g  DLA Ivana 30%
White Chocolate
150g  DLA Orange
Filling & Topping

Filling & Topping


1. Make the cookies. Put egg whites in a
bowl, add granulated sugar in batches
and whisk. Whisk until stiff peaks form,
then add the egg yolk and mix. Sift the
cake flour in and cocoa powder
together and mix with a spatula. Put it
in a piping bag, and pipe on a baking
sheet with parchment paper to a size of
about 4 cm in diameter. Dust powdered
sugar on the surface of the dough and
bake in an oven preheated to 180°C for
about 15 minutes. Let it cool and
remove from the baking sheet.

2. Make the orange ganache. Heat DLA
Orange Filling & Topping in a
microwave. Pour it to the DLA Ivana
30% White Chocolate to melt it. Mix
with a blender until smooth. Chill in a
refrigerator until it becomes firm
enough to pipe.

3. Assembly: Pipe the orange ganache
on 1 cookie and pipe the DLA Orange
Filling & Topping to the center of the
ganache. Sandwich it with another
cookie. Dust with powdered sugar.
