Method:

INGREDIENTS

10 strawberries
Potato starch
Cocoa powder

GANACHE:
150g DLA LIPA 44% Milk Chocolate Couverture
75g Cream

MOCHI:
150g Rice cake flour
2 tbsp Sugar
180ml Water

METHOD

  1. Make a ganache by melting the chocolate in a double boiler, mix it with warm cream, and cool it in the refrigerator to set.
  2. When ganache is set, divide it into 10 equal parts. Roll out 10 pieces and wrap it around a whole strawberry. Place them in the refrigerator to set.
  3. Put rice cake flour, sugar and water in a heat-resistant bowl and mix with a rubber spatula.
  4. Wrap the bowl and heat in a 600w microwave for 2 minutes. Mix with a rubber spatula, wrap again and heat for another minute. Heat and mix repeatedly until the mochi becomes glossy. 2 to 3 times.
  5. Place the mochi on a clean work surface with potato starch to prevent from sticking and divide it into 10 equal parts.
  6. Roll out and wrap the mochi around the chocolate balls with strawberries.
  7. Roll out the mochi ball into cocoa powder and enjoy!
