150g DLA Santo Tomas
70% Dark Chocolate Couverture
15g Cocoa powder
400g Cream cheese
100g Powdered sugar
400ml Fresh cream
4 whole eggs
1 egg yolk


-Bring the cream cheese to room temperature.
-Melt DLA Santo Tomas in a hot water bath.
-Spread parchment paper on the molder.

  1. Put softened cream cheese in a bowl. Mix well. Add powdered sugar and mix until smooth.
  2. Beat the whole egg and egg yolk together and add little by little and mix.
  3. Sift cocoa powder and mix, then add fresh cream and mix well.
  4. Add melted DLA Santo Tomas and mix. Pour into the molder while filtering, and preheat to 250 degrees. Bake in hot oven for 35 minutes.
  5. Remove from the molder after the heat is removed.
