Method:

INGREDIENTS

BOTTOM LAYER:
100g Biscuits (commercially available)
50g Unsalted butter

MOUSSE:
150g DLA Ivana 30% White Chocolate
150ml Milk
6g Gelatin Powder
40ml Water
200ml Cream
200g DLA Strawberry Filling & Topping

DECORATION:
300g DLA Covergeli Red Glaze Mixed fresh berries

METHOD

  1. Soak the gelatin powder in water.
  2. Crush the biscuits and add in the butter.
  3. Boil the milk in a sauce pan, add the soaked gelatin and mix well to dissolve.
  4. Put white chocolate in a bowl, add the hot milk mixture and melt the chocolate while mixing.
  5. Once melted, place the bottom of the bowl in ice water and mix until thickened.
  6. In a separate bowl, whisk the cream in 3 portions and mix with the Strawberry Filling & Topping.
  7. Mix both mixtures together.
  8. Pour into a pound cake pan lined with plastic wrap.
  9. Place the biscuits on top and chill in a refrigerator to harden completely.
  10. Warm up the Covergeli in the microwave and glaze the mousse cake.
  11. Decorate with mixed berries right on top.
  12. Let set in the fridge and enjoy.
