This special fruit preparation allows you to have a very stable filling for freezing and baking applications. It is the ideal filling for frozen dough manufacturers where high freeze- bake stability are required as it will keep its shape and organoleptic properties during piping, cutting, folding, freezing, and baking of the pastry.
